Chicken Fajitas

1-2 T olive oil
3 onions, sliced
6 cloves garlic, pressed
3 packages 1 to 1.5 pound chicken tenders
1 15oz can tomatoes
2 tablespoons chilpotle chile powder or
2 tablespoons chilpotle chiles canned
2 limes, juiced
1/2 tsp cumin
1 to 2 tsp kosher salt
Large handful fresh cilantro, chopped

Saute onions until golden. Add garlic and saute 1 minute. Add chicken, tomatoes, chilpotle, lime juice, cumin and cilantro. Simmer 20 minutes until tender. Shred chicken.
